Savoy Cabbage in TJ's Garden

These cabbages were huge. The head shown here was probably about a foot and half in diameter. The vegetable gardens at Monticello were the subject of extensive archaeological investigations back in the 80's. My old mentor, Bill Kelso, now director of the investigations at Jamestown, was the director of the work at Monticello in those days.

The food from these gardens is distributed to employees of the Jefferson foundation that runs the site.

If you follow Mark at 4x6, you will appreciate my thoughts of just how many West Virginia Hot Dogs could be made from this single head of cabbage!
